I know there are ways to increase text size etc, but what i want is a blanket solution that gives me a nice, uniform, pretty interface to access all of my media. Its not a small TV, the windows toolbar at 1920x1080 is just so tiny i cant stand it. What I'm looking for is something that replaces the PC's default windows/linux UI with the slim toolbar and tiny text, to something that shows all my album art, movie covers, titles, etc at a large scale so that they can be seen/read from across the room. I have a computer science engineering degree, i understand the concept of resolution etc.

Changing the interface to a media center interface is exactly what will solve the problem. Look at accessibility options in windows and they will have a zoom option I believe you can change the default system font sizes too, somewhere. Linux wont make anything bigger or easier to read.
